We started working with four Amish families over 2 years ago. We promised to buy their milk because they were farming in a regenerative way, rotating the cows to fresh pasture every day, not feeding any grain and used no GMO's are on their farms. They practice a slow method of pasteurization, with very low heat and don't homogenize the milk either! These are all very important things to us at Achatz Handmade Pie Company.

100% grass milk is from Michigan Amish farms. This delicious milk is non homogenized, meaning you'll have to 'shake' the jug to reincorporate the cream! The milk is also slowly pasteurized, called low temp. pasteurization. They heat the milk very slowly to 145 degrees F preserving much of the good probiotics.  

Many milk processors go fast and hot, what they call flash pasteurization, getting the milk up to 190 degrees. 

So I'm glad the Amish still do things the old fashion way, and you'll be able taste the difference.
